From Wednesday June 11, diners can enjoy a six-course menu which will highlight the best aspects of the iconic ingredient — think irresistibly aromatic and flavour-filled fare. Holding a long-standing reputation as one of the world’s most luxurious ingredients, executive chef of Bacchus, Marco Sfamurri will once again return with a curated menu described as a ‘love letter to the truffle’. Ooh la la!
This ode to the earthy and seductive morsel will be written with dishes such as the forest trilogy with maitake mushroom, Jerusalem artichoke and porcini dashi, a truffle caramelle ravioli including ricotta, chestnut and pecorino, and a Rangers Valley wagyu cheek delightfully flavoured with parsnip, celeriac puree and black-truffle jus.
And if you thought you were all truffled out, think again. For dessert, guests will indulge in a truffle and porcini mousse with cocoa soil and hazelnut praline. Let’s just say that if you’re a fiend for an all-night filling of truffles then you’re in the right place.
