Spuntini like Sicilian olives filled with veal and pork, and fried calamari with white bait, prawn and lemon mayonnaise lead into antipasti plates of spiced Brisbane Valley quail and half-shell scallops with Jerusalem artichoke. FIRMA’s mains include pumpkin cappellacci with brown butter, sage and amaretto crumb, Queensland reef fish with artichokes, lemon veloute and basil oil, and the Bistecca alla Fiorentina T-bone. Cocktail lovers can sip on signatures like FIRMA’s Spritz and Nonno’s Nightcap, while wine enthusiasts will be drawn to the custom-built display cellar, showcasing exclusive drops from the hotel’s impressive 6000-bottle collection.
For private dining, FIRMA offers a dedicated space known as Nonna’s Table – a warm and intimate room tucked beside the main dining area. Seating between six and 14 guests, the space is framed by a curated wine display and a 150-year-old European stained glass window, creating an elegant backdrop for everything from family celebrations to corporate lunches. Guests can select from two chef-curated set menus priced at $89 or $120 per person, or work with the kitchen team to tailor the experience. Boutique Italian wines are also available to complement the occasion.
